Quest for My Pretty - Recipe: Mike's One Pot Hot Mess

During my "Quest for My Pretty" and my desire to lose weight, my husband has had to get a little creative when it comes to cooking. He's not used to thinking about calories, or substitutions. But he too wants to see me in a smaller dress size and therefore has begun to learn. He also usually gets home later than I and has very little time to cook. I am learning to cook, but I can't do much yet. Anyway, I asked his permission to share this recipe with you. It is one of our favorite items that are now in our rotation:

Mike's One Pot "Hot Mess"

Ingredients - Makes 4 Servings, around 282 Cals per serving
(For an even lower calorie version, omit the rice)
  • 3/4 lb Lean Ground Sirloin
  • 1 Red Bell Pepper
  • 1 Yellow Bell Pepper
  • 1 Green Bell Pepper
  • 2 Cups Birds Eye Steam Fresh Long Grain Brown Rice
  • 1 Packet of Kroger Fajita Seasoning
  • In a large pan, brown the ground sirloin (in this case, I don't believe Mike adds oil).  
  • Add Veggies. Veggies can vary as long as they remain non-starchy.
  • Microwave Rice. Add to pot.
  • Mix ingredients stirring around for a while.
  • Add Fajita seasoning and mix.
  • Serve
Cooking time is less than 20 minutes even with prep, unless you count thawing the beef.

I keep trying to get Mike to try this with an Asian flavor profile instead of the fajita seasoning, but he is resistant. Some day...
